Apple Pie Ice Cream Sandwiches

Apple pie a la mode…Who doesn’t love it?? I personally love the apple pie with the crumb topping. The. Best! I’ve been toying with this idea for a while and now I’ve got it. This is a deconstructed apple pie a la mode if you will. Sweet and smooth cinnamon and vanilla ice cream with chunks of caramelized apples, sandwiched between two soft and simple oatmeal cookies. The cookies are PACKED with brown sugar and a hint of cinnamon for that delicious crumb topping texture and flavor!

Ingredients

Oatmeal Cookies

Instructions
  1. In a large bowl, combine milk and sugar. Mix well until sugar is almost dissolved.
  2. Add vanilla, heavy cream and cinnamon to the bowl. Mix WELL.
  3. Pour your ice cream mixture into ice cream maker and churn for 20 minutes.
  4. In the last 5 minutes, add caramelized apples and all the ooey gooey sugar bits into the mixer. Once the apples are incorporated, transfer ice cream to a freezer safe tupperware and promptly place in freezer for at least 2 hours (I left mine in the freezer for 4 before diving in)
  5. At this point, feel free to serve yourself a scoop or two in a bowl if you don't want or have time for the sandwich part...it's still delicious.
Oatmeal cookies
  1. Preheat oven to 350 degrees. In a large bowl with a mixer, combine butter and brown sugar. Beat those babies on medium speed until well incorporated and creamy.
  2. Add vanilla and eggs, beating one at a time.
  3. In a separate bowl, combine all dry ingredients including spices. Add the dry to the wet, scraping down the sides of the bowl when needed.
  4. Add your oats and mix until just combined. Add walnuts (if using...I love nuts so I use them) and mix until just incorporated.
  5. Drop dough by the tablespoon onto an ungreased cookie sheet. Bake for 12-14 minutes. My oven seemed to do well for 12.5-13 minutes but everyone's oven is different. You just want the edges to be slightly golden brown. Let cool for 5 minutes and then transfer to a plate or tupperware container. The cookies need to be Completely cooled before assembling the ice cream sandwich.
Caramelized Apples
  1. Melt butter in a medium sized saute pan and add your chopped apples. Stir in sugar and cinnamon and saute over low to medium heat until apples are tender (about 8 minutes) Transfer to a bowl and COOL COMPLETELY before adding to your ice cream mixture.
Recipe Notes

Assemble your apple pie masterpiece! Scoop as little or as much ice cream into your sandwiches as your heart desires. Personally, I have a "go big or go home" attitude when it comes to my desserts.

These are great for a large family or for a bit of a  "WOW" factor when entertaining. Although incredibly simple, feel free to say "oh, it's nothing. I just caramelized some fresh apples, made a homemade batch of ice cream and whipped up some delicious cookies from scratch." The translation obviously being... "I ROCK!"
