Charcoal Grilled Sausage and Mushroom Pizza

I think we can all agree that living in Southern California has its perks.  Am I right? Outdoor grilling year round is one of them. I apologize in advance to my friends living in the Midwest and Northeast. It’s 80 degrees and not a cloud in the sky. Let’s grill!! Matter of fact, let’s grill pizza!  You can find my dough recipe in my “Pizza Feasting Friday” archives. You can never go wrong with Sausage, mushrooms and fresh herbs, so that’s what you get today.

Ingredients

Instructions

  1. Heat 1 tsp olive oil in a small skillet. Add 1 cup buttery cremini mushrooms. Sprinkle on salt and pepper and cook over medium heat until they begin to release their juices(about 5 minutes) then add grated garlic clove and thyme. Saute another 5-7 minutes until tender and deliciously aromatic. Set aside.

  1. Place your stretched out dough onto the center of the charcoal grill.
  2. After 5 minutes flip that bad boy over.
  3. Add your toppings. We add our cheese first and then dollop our sauce over the top and continue to scatter on the rest of the ingredients.
  4. Close the lid on your grill and continue to cook 10-12 more minutes until cheese is melted and edges are slightly golden. Remove from the grill and pour yourself a beer.
  5. The crust is chewy and crispy with a hint of smokey grill flavor. A complex tastebud smack and texture that can only be achieved by grilling over hot coals. This crust alone is enough to make me wonder why I even bother to make pizza in my conventional oven.
