Lemon Cream Pie Ice Cream

The creamy richness of ice cream with the vibrant aroma and flavor of lemon make for the perfect frozen treat. Dessert doesn’t always have to be heavy or only enjoyed after a full meal. For a sweet frozen bite anytime, I relish in the power of citrus…basically, I. Love. Lemon. It is the joy of sweet and tart with the satisfaction of light yet creamy. Lemon Cream Pie Ice Cream is the quintessential dessert to fulfill the senses.

Ingredients

Instructions
  1. In medium bowl combine the milk and sugar and whisk until sugar is almost completely dissolved.
  2. Mix in heavy cream, vanilla and fresh lemon juice.
  3. Turn on ice cream maker and add milk mixture. Churn for 20 minutes, then add the lemon essential oil and continue to churn for another 5 minutes. Ice cream will be soft. If you prefer your ice cream to be a firmer consistency like I do, transfer the ice cream to the freezer in a tupperware container for at least 2 hours.
  4. Serve yourself a generous bowl of frozen lemony goodness. You deserve it! Although you may have to lock yourself in the bathroom to enjoy alone. Speaking for a friend...ahem.

lemon ice cream close upIf you have any shortbread cookies or Madeleines in the cupboard, now would be a good time to get them out and crumble them over the top of your Lemon Cream Pie Ice Cream!! Trust me!
