Peanut Butter Balls

A quick and easy protein packed snack with fiber and sustained release carbs.  Peanut butter balls are perfect to pop before soccer practice and in between meals.

Ingredients
Servings: about 15 balls
Instructions
  1. Combine the peanut butter, honey and oats in your kitchen-aid mixer with the paddle attachment on low speed. Mix until incorporated. Add wheat germ, flax and vanilla. Continue to mix on low speed until the mixture begins to come away from the sides of the bowl (about 2 minutes)
  2. Add chocolate chips if desired and mix on low for 30 seconds.
  3. Roll mixture into walnut sized rounds and let chill in refrigerator in an airtight container for 30 minutes before enjoying your balls. Store in fridge for 7-10 days. (they never last that long though)
Recipe Notes

As far as chocolate chips go, two of my kids love them and one not so much so I change it up every so often.
