Pistachio ice cream

I love ice cream, but I have texture issues so I like to put stuff in it, crunchy stuff, texture stuff and I love nuts! Yep, I said it. I LOVE ME SOME NUTS!  This way I can perform acts of ice cream gluttony and not even bat an eye. Crunchy, creamy and perfectly sweet, this ice cream will be the star of the show all year long.

Instructions
Toasted Pistachios
  1. Take a cup of the pistachios and lay them out on an unlined, ungreased cookie sheet. Bake them for 7 minutes at 350 degrees to toast them and bring out the flavor. Transfer the toasted pistachios to a bowl and let cool.
  2. Once cooled, grind the pistachios in a food processor with the 3 teaspoons of sugar. Set aside.
Ice Cream
  1. In a large bowl stir together the milk and 1 cup sugar with a whisk for a minute or two just until the sugar is almost dissolved. Add the heavy cream and extracts. Chill 30 minutes.
  2. Stir the ground pistachios into the chilled mixture just before adding to the ice cream maker until well incorporated. Pour into the machine and turn on. Churn for 25 minutes. The ice cream will be very soft. Transfer to a sealable tupperware container and place in the freezer for 2-8 hours before serving.
  3. Sprinkle the other 1/2 cup of reserved pistachios over the top of each individual ice cream portion for added crunch and flavor. WARNING!! This ice cream is highly addictive and delicious. Serve your family and friends while looking and feeling like a boss, but don't let that go to your head.
