Pizza with Fresh Tomato and Basil

Spring is here! My tastebuds are screaming for me to change it up!  I want fresh, bright, simple flavors.  I don’t feel like eating meat tonight, is that a crime? Clearly to my husband it is. His rubbernecking in my recipe has resulted in salami somehow making it’s way into the picture, but marriage is about compromise, so it’s only on half. Thinly sliced juicy tomatoes, ooey gooey mozzarella and beautiful blooming basil from the garden make this pizza simple perfection.

  1. Stretch your dough to desired size on a pizza stone. Get all up in there with your shredded mozzarella and pizza sauce, putting the mozzarella first! For my pizza dough and pizza sauce recipe, check in my "Pizza Feasting Friday" archives.
  2. Now let's add some simple freshness. start with the fresh basil...and salami... I guess. (optional on half)
  3. Layer on the bright red tomatoes. Make sure they are only 1/8 thick otherwise...you will have a juicy mess sitting on top of your finished pizza and be super annoyed.
  4. Cloak it all under your thick slices of fresh mozzarella making sure you cover the basil as best you can so it doesn't get scorched, and bake that pie! 500 degrees 14-16 minutes.
  5. Let the finished deliciousness rest for 5 -10 minutes. Enjoy your meal not made of ham or turkey, but remember which side the salami is on.
  6. Slice and enjoy the simple classic flavors of a pizza pie done right...and don't forget the wine.
