Three Cheese Pizza with Bell Peppers, Mushrooms and Pepperoni

Tonight we used our whole wheat pizza dough  (see kale pizza archive for recipe), and felt like being cheese heads.  Bell peppers, mushrooms and pepperoni are a no brainer for pizza, but kick up the flavor with the more meaty cremini mushrooms instead of white button and add a blast of tangy, pungent, buttery gorgonzola…HEAVEN!

Instructions
  1. lightly flour a pizza stone and begin stretching your dough to desired size.
  2. once you have the dough to size, add your shredded mozzarella...yes cheese first...changing it up! Then drizzle your sauce on top of the cheese.
  3. Shower your chopped and sliced veggies over the sauce and arrange your pepperoni and fresh mozzarella over the veggies. Sprinkle the gorgonzola over the top to seal the deal.
  4. Bake the pizza at 450 degrees for 15 -17 minutes until slightly browned, bubbly and gooey. Cool 5 minutes, slice and serve.
Recipe Notes

We found that by layering the cheese first, the crust held up a little better (while stuffing our faces) with the weight of the toppings.  Also the flavor and texture was just slightly different...in a good way.  Also remember to place a cookie sheet under your pizza while cooking to catch any cheese overflow.

Also- I do not recommend scheduling a make out session after consuming gorgonzola cheese.
